I've travelled with easyjet a lot and really I have to say they are 9/10 one of the best. Just thought some input could be useful, I think I've flown with them about 40 times in the last 3 years and to avoid excess charges just avoid booking any form of hold bag on and only book on windsurf/sports equipment.
You can book on as many as you like, you just do it after you've booked the flight and then simply keep adding one. The most I had under my name was 4 on one flight. Make sure each bag is 32.9 kilos or less BEFORE you get to the airport and you shouldn't have any troubles checking in. Throw your boardies, wetsuits, harness, extensions, everything into the windsurf bags, after all they are more protective than your normal holdall anyway.
The best thing you can do is buy a set of electronic hand scales that you can put in your hand luggage. My ones cost me 20 euros on the plane and it saves you a lot of hassle for the return journey also.
Last thing, if it's raining on the way to the airport then be prepared to be anything between 1-3 kilos over, then it gets messy when you try to check in and questions start getting asked.
Hope that helps and watch out for Ryanair, they are the worst!!!!!
